Have you tried ‘Banh Cuon’ before? It looks like a Vietnamese ‘chee cheong fun’, but the flavours are quite different from what you may be used to. In Vietnam, especially the North, it is a popular street food which is usually eaten for breakfast, but you can also eat it for lunch or dinner.
Although it is rare nowadays, some eateries in Vietnam still add a drop of water bug ‘essence’ to elevate the dish to the next level. This pungent liquid is extracted from a rare type of water bug and is very labour intensive to produce, which makes it so expensive that most stalls use an artificial version instead.
At Pho King, we carefully prepare our rice crepe rolls in the traditional way, steaming the rice flour batter using a cloth steamer. Although it doesn’t look hard to make, actually it takes technique and experience to make them super thin. After steaming, they are filled with stir fried minced pork and wood-ear and rolled. The rolls are then topped with crispy fried shallots and served with fresh herbs and vegetables, Vietnamese pork ham and a sweet and sour fish sauce dip.
